Ingredients

  • 6 cups chicken broth
  • 8 shiitake mushrooms, thinly sliced
  • ½ cup bamboo shoots, thinly sliced
  • 7 oz firm tofu, cut into thin strips
  • 1 cup carrots, julienned
  • ¼ cup soy sauce
  • 1 teaspoon granulated sugar
  • 1 tablespoon Sriracha hot sauce
  • 1 teaspoon ground white pepper
  • ¼ cup white vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • ¼ cup cold water
  • 2 large eggs, lightly beaten
  • 2 green onions, thinly sliced
  • Salt, to taste

Method

  1. Pour the chicken broth into a 5-quart pot and bring to a gentle boil over medium-high heat.
  2. Add the shiitake mushrooms, bamboo shoots, carrots, and tofu.
  3. Reduce the heat to medium and simmer for 5 minutes, until the vegetables begin to soften.
  4. Stir in the soy sauce, sugar, Sriracha, white pepper, vinegar, and sesame oil.
  5. Simmer for another 5 minutes to blend the flavors.
