Yield
4 servings · 2 lbs chicken wings
Cook time
40–45 minutes

Ingredients

  • 2 lbs chicken wings, split, tips removed
  • ½ tablespoon avocado oil
  • 1 tablespoon aluminum-free baking powder
  • ½ teaspoon salt
  • 2 teaspoons lemon pepper seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, finely minced
  • 1 teaspoon fresh lemon zest
  • 1½ tablespoons fresh parsley, chopped
  • ¼ cup freshly grated Parmesan cheese

Method

  1. Preheat the oven to 425°F (220°C). Place a wire rack over an 18×13-inch rimmed baking sheet.
  2. Pat the chicken wings thoroughly dry with paper towels.
  3. In a large bowl, combine the wings, avocado oil, baking powder, salt, lemon pepper seasoning, garlic powder, onion powder, and paprika.
  4. Toss until the wings are evenly coated.
  5. Arrange the wings in a single layer on the wire rack, leaving space between each piece.
  6. Bake for 40–45 minutes, turning halfway through, until golden, crispy, and cooked through to 165°F (74°C).
  7. While the wings finish baking, melt the butter in a 1-quart saucepan over low heat.
  8. Add the minced garlic and cook gently for 1 minute until fragrant.
  9. Remove from the heat and stir in the lemon zest and chopped parsley.
  10. Transfer the hot wings to a large mixing bowl.
  11. Pour the garlic butter over the wings and sprinkle with the grated Parmesan.
  12. Toss gently until every wing is coated with buttery garlic and cheese.
  13. Transfer to a serving platter and serve immediately.

Practical Woman's Secret
Use aluminum-free baking powder, not baking soda, and dry the wings thoroughly before seasoning. This helps create beautifully crispy skin without deep-frying.
